Well, it’s a good thing we’ve been keeping a ‘just in case’ house fund because we just gave a large percentage of that over to a plumber. Of course this is coming right after my post last week where I was fantasizing about finally redecorating our living room. This clearly meant that it was time for a wallet conscious meal!
This dish was a knockout. It was budget friendly, quick to make, filled with flavor, and lasts in the fridge for the week! I started by using this recipe as a guide which gave me the key pointer of ensuring that the chicken touches the bottom of the pot rather than the sauce so that the sugary barbecue sauce doesn’t burn. Her recipe also called for 2 cups of bbq sauce and 1/2 cup of water but as I was cooking I realized I only had 1 cup of BBQ sauce. So, instead I added vinegar, along with some beer.
When I first opened the Instant Pot lid I was impressed with how juicy the chicken breast was. Each of the large breasts was moist and easy to shred. But, they weren’t yet holding the flavor of the delicious sauce. The sauce was also a bit thin. So, I shredded the chicken and threw it back into the pot with the lid off on saute mode for about 10 minutes. Perfection!
This chicken is perfect for sliders and you can adjust the spice level by adding more hot sauce or even topping each slider with some hot sauce before serving. I topped each hawaiian slider roll with some shredded bbq chicken, coleslaw, and a pickle! These can be served right away or stored and reheated on a later date.

I bet this would also work slow cooked all day in a crock pot. But yes, I do think this would be a hit!
