Lamb Meatball Pita

I’m not exaggerating when I say that these meatballs are in the top 5 dishes that I’ve made since starting the blog.  Not only are the meatballs themselves packed with rich spices but the addition of the cooling lemon garlic hummus, spicy pickled radishes, and some fresh lettuce made the culminating pita a mouthwatering treat.  I used this recipe as a guide and plan to make them again with her delicious avocado sauce!

Many of the dishes that I made here on the blog are things that I can whip together at night after work.  These, on the other hand, are more of an afternoon affair due to the various components.

This weekend marks the full transition back to school and back to routines.  I cannot wait for fall weather and fall cooking – it can’t come soon enough!  What are your favorite fall dishes to make?

Baked Lamb Meatball Pitas

  • Servings: 12 - 13 meatballs

These lamb meatball pitas take some time to bring together but it i WORTH it! These are flavorful meatballs you are sure to enjoy!

Ingredients

  • 1 lb ground lamb
  • ¾ cup finely diced onion
  • 3-4 cloves of garlic – diced
  • ½ cup fresh chopped fresh parsley
  • Zest of 1 lemon
  • 2 teaspoons of cumin
  • 1 teaspoon of dried oregano
  • ¼ teaspoon cayenne
  • A pinch of salt and pepper
  • Lettuce – ideally one with some crunch
  • Feta cheese
  • Lemon garlic hummus,
  • Spicy pickled radishes and jalapenos

Steps & Notes

  1. Preheat the oven to 425 degrees
  2. Line a baking sheet with tin foil
  3. In a large mixing bowl combine the lamb, onion, garlic, fresh parsley, lemon zest, cumin, dried oregano, cayenne, salt and pepper
  4. Cook for 16-19 minutes
  5. When done, cut each pita in half and spread lemon garlic hummus on one side. Then add a layer of fresh lettuce, 3 meatballs, and top with pickled radishes and/or jalapenos.
  6. Top with a sprinkle of feta cheese and enjoy!
